Fresh Oysters, Melbourne

We had this at a little cosy restaurant near our hotel in Melbourne. It was a seafood restaurant and a few days before that I had seen people ordering HUGE lobsters on a bed of ice.

These oysters were small but VERY sweet. A thing that I did not know prior to visiting Melbourne (this is my first time in Melbourne) was that they were popular for oysters.

The little white things you see under the oyster is not ice but salt! A first for me. I wonder what it is for? To keep the oysters chilled perhaps?
